It's okay to say things the instructor might disagree with

I completly agree with this statement because it can add color to the essay. If you just write an essay that you know that the instructor will agree with then he/she will most likely just look at it as if it was an "average" paper and then give you an "average" grade. But if you give him a paper that makes the instructor think and makes him think ideas that contradict his own ideas. It would most likely really work out for you and get an above average grade but if you can really make the professor mad then it could back fire on you and then you get a bad grade.

You need to follow a formal structure

I do not agree with this statement due to the fact that not all essays have exactly a formal structure. There are essays that do need the typical four/five paragraph essay but what if you are writing a narrative essay that brings across the same point? You can't just put that into four paragraphs and have the flow be very well. It needs to be broken into different paragraphs because that is what fits. And sometimes the formal structure can be quite boring and if you use a non formal structure then that can possibly get you a better than average grade just because it is different.
